All about food (Strawberry short cake)
Ingredients:
**For the shortcakes: **
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 2/3 cup cold heavy cream
- 1 teaspoon vanilla extract
For the strawberries:
- 1 1/2 pounds fresh strawberries, hulled and sliced
- 2-3 tablespoons granulated sugar (adjust to taste)
- 1 teaspoon vanilla extract

- 1 cup cold heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
1. Prepare the strawberries:
- In a bowl, combine the sliced strawberries with granulated sugar and vanilla extract. Stir gently to coat the strawberries evenly. Let them sit at room temperature for about 30 minutes to allow the flavors to meld.
**2. Make the shortcakes:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- In a separate bowl, mix together the cold heavy cream and vanilla extract.
- Pour the cream mixture into the flour mixture and stir until just combined. Be careful not to overmix.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Pat the dough into a rectangle about 3/4 inch thick. Use a 2 1/2-inch round cutter to cut out circles of dough, rerolling the scraps as needed. You should get about 6 shortcakes.
- Place the shortcakes on the prepared baking sheet and bake for 15-18 minutes, or until golden brown. Let them cool slightly on a wire rack.
**3. Make the whipped cream:
- In a chilled bowl, whip the cold heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
**4. Assemble the shortcakes:
- Split each shortcake in half horizontally using a serrated knife.
- Place a spoonful of macerated strawberries on the bottom half of each shortcake.
- Top with a generous dollop of whipped cream.
- Place the other half of the shortcake on top.
- Garnish with additional strawberries and a dusting of powdered sugar if desired.
**5. Serve immediately and enjoy your delicious homemade strawberry shortcakes.
This recipe makes about 6 servings. Adjust the sweetness of the strawberries and whipped cream according to your taste preference.
